There are just days when nothing tastes better than a gooey, warm chocolate chip cookie.
I rarely am willing to make an entire batch of cookies because I might eat them all. One mug cookie is the perfect compromise for a temptation-free sweet treat.
Wally Amos said it best: I think the kazoo and chocolate-chip cookies have a lot in common. All you need is a mouth to appreciate either one.
I recently discovered a fantastic recipe for a microwaveable chocolate chip cookie in one of my favorite Pfaltzgraff’s limited-edition meal mugs. Wrapped all around the sides of the cool 24-ounce mug was the recipe for a chocolate chip cookie.
I was utterly intrigued. The recipe seemed uncomplicated and offered me the option to whip up a sweet craving at any time in just a few minutes.
I’ve always loved warm chocolate chip cookies but hated cleaning up the dirty dishes they spawned.
The advantage of this mug dessert is everything is mixed with a fork right inside the cup. This method reduces the need to clean mixing bowls, utensils, or baking sheets.
Ingredients
Start with a 24-ounce microwave-safe mug.
- 1 tablespoon of white sugar
- 1 tablespoon of brown sugar
- 1 tablespoon of melted butter
- 1 egg yolk
- 3 tablespoons of all-purpose flour
- 2 tablespoons of chocolate chips
- 12 extra chocolate chip or topping
Optional Ingredients
After some experimenting with the original recipe, I added the following ingredients to increase the flavor of the cookie.
The vanilla extract added a hint of flavor.
- 1/4th teaspoon of vanilla extract
- 1 pinch of salt
- 1/8th teaspoon of baking soda
Directions
Start with a clean 24-ounce mug or slightly larger.
The cookie will rise during microwaving.
- Add white and brown sugar, melted butter, and egg yolk.
- Optionally you can add 1/4th of vanilla extract and a pinch of salt.
Mix the first ingredients with a fork in the mug to blend completely.
- Add the all-purpose flour and optional 1/8th teaspoon of baking soda.
Blend completely with a fork.
- Once the mixture is mixed completely, add 2 tablespoons of chocolate chips.
- Finish blending with a fork.
- Press dough down into the mug.
- Sprinkle the top of the dough with the 12 extra chocolate chips.
Microwave for 45 seconds up to 1 minute on 1200W.
Allow the mug cookie to cool slightly before eating to avoid burning your tongue and mouth.
Experiment With An Array Of Cookie Toppings
You can add optional ingredients to the top of the cookie.
Some of these ingredients might include a scoop of vanilla or chocolate chip ice cream.
If you prefer, you can drizzle the cookie with chocolate or caramel sauce. A dollop of whipped cream or whip topping also makes a great topping.
I promise I won’t judge you if you double the recipe and make two cookies. Just have two 24 ounce mugs available for mixing and microwaving.
If life is sweet with one hot microwave cookie, it’s even sweeter with two.
